Sous Chef: Grinny
About the Job
Harlem-rooted, of Caribbean descent / mixed race. A former prodigy, Grinny got their nickname for always wearing a smile. Starting at 15, she/he quickly earned acclaim for taking ordinary food to the next level. They are now second in command: a serious chef with real restaurant experience and a point of view. They have worked in respected New York kitchens and brings discipline, speed, and taste to the pizzeria operation. Their relationship to pizza is not traditional. They hold an unconventional culinary perspective at the shop, including techniques and flavors influenced by their heritage — maybe a specific way of roasting tomatoes that gives the sauce its depth. They help make the restaurant feel authored vs. inherited. This is not nostalgia pizza. It is a living New York kitchen.
