The kind of person with something to say about everything, always ready to put the world to rights with whoever happens to be standing at the counter. Big-hearted, blunt, totally comfortable speaking his mind. Happy to tell customers they're ordering the wrong sandwich, call them crazy' or weigh in on any subject - might be serious, but always delivered with warmth and genuine affection. Character over caricature; nothing performed or self-conscious. Looking for someone who feels like they've spent decades behind the same deli counter, chatting to regulars, welcoming newcomers and becoming as much a part of the neighbourhood as the sandwiches themselves.
